Peanut Butter Chocolate Chip cookies

What you need:

  • 1/3 cup peanut butter (can also use any nut butter: cashew, almond, etc.)

  • 1 1/2 cups almond flour

  • 1 egg (or flax egg if vegan)

  • 1 tbsp dairy-free milk (almond or cashew)

  • 3 tbsp honey (or maple syrup if vegan)

  • 1/4 cup coconut oil melted

  • 1 tsp vanilla extract

  • 1/4 tsp baking soda

  • dash of cinnamon

  • pinch of sea salt

  • 1/4 cup semi-sweet chocolate chips (can also use dark chocolate or break down a chocolate bar into small chunks)

How to:

  • Preheat oven to 325F

  • Combine all ingredients (starting with the egg, whisked) in a medium bowl and mix well with spatula

  • Line a baking sheet with parchment paper

  • Use a wet spoon to scoop out batter and use your (wet) hands to roll into a ball then flatten onto baking sheet

  • *I like my cookies flatter but any depth works! They will not expand, so the depth you make them is the one you’ll get as a result

  • Sprinkle top of cookies with a tiny bit of sea salt

  • Bake for 10-12 minutes

  • Let cool and enjoy!
