Easy Veggie Couscous

What you’ll need:

+ 1 cup couscous

+ 2 cups veggie or chicken broth

+ 1/2 yellow onion, chopped

+ 3-6 garlic cloves, minced — depends on how garlicky you like it

+ 3 medium carrots, chopped

+ 1/2 head of broccoli, chopped

+ 1/4 cup olive oil

+ S&P, to taste

How to:

+ Cook couscous as directed on the package using 2 cups broth + 1 cup couscous

+ In a medium/ large skillet, heat about half the amount of olive oil and add minced garlic. Sauté for about 2 minutes then add the onion and cook until translucent

+ Add carrots and broccoli and continue to sauté until veggies are cooked through

+ Once the couscous is done cooking, add it to the skillet with the veggies

+ Add remaining olive oil and season with S&P

+ Enjoy! xx
