Chickpea Smash over Avo Toast

Easily one of my favorite things to meal prep at the beginning of the week! I’ll make a batch of the chickpea smash and store it separately in a container, then top my avo toast for breakfast or my salads for lunch/ dinner.

What you’ll need:

  • 1 can chickpeas, drained and rinsed

  • 1/4 cup olive oil

  • 1/ 2 lemon, juiced

  • 1/ 4 cup chopped red onion

  • handful fresh cilantro, chopped (you can also use dried)

  • 2-3 tbsp maple syrup (or honey if you prefer)

  • 1/ 2 tsp ground cumin

  • 1/ 2 tsp coriander

  • salt & pepper to taste

  • optional: you can add raisins for a more sweetness

  • 1/4 avocado per piece of toast

  • favorite bread - I use Ezekial

How to:

Add chickpeas, olive oil & lemon juice to a bowl and mash with a fork. Add red onion, maple syrup, cilantro and spices and continue mashing until you get your desired texture. Toast your bread and spread on the avocado then top with the mash. Enjoy!
