Butternut Squash Chicken Bites

My new meal prep favorite! They are so filling and yummy- I make a large batch and just grab-n-go when I don’t have time to make lunch or when I just want a quick snack. Gemma loves them too, so I’m definitely making these on repeat! xx

What you’ll need:

  • 1.5 cups butternut squash, cubed

  • 1.5 cups sweet potato, cubed

  • 1lb organic ground chicken

  • 3-4 cloves garlic, minced

  • 1/4 cup green onion, chopped

  • 4 tbsp almond flour

  • 1 tbsp coconut oil

  • 1 tsp garlic powder

  • 1 tbsp smoked paprika

  • S&P to taste

How to:

  • Steam or boil butternut squash and sweet potato. Drain then mash until smooth. I used a fork.

  • Preheat oven to 400 and line baking sheet with parchment paper.

  • In a large bowl, combine the mashed butternut squash/ sweet potato with remaining ingredients and mix well.

  • Using a small spoon or scooper, scoop out a small amount of mixture and use your hands to roll and flatten slightly then line then evenly on the baking sheet.

  • Bake for about 25 minutes.

  • Let cool and enjoy! I loved dipping into guacamole!
