Meal Prep: Volume 2

I haven’t meal prepped like this in a few months and although this took me some time to make, it will save me so much time during the week. When planning my meals, I now keep Gemma in mind because she’s starting to eat the same menu as I do. So this is really for the whole family! Prepping a large amount of food like this, not only is time saving, but also ensures that we will be eating clean, organic, delicious food- even with busy schedules.

It’s one thing to order a “healthy” salad from your usual restaurant, but I always say it’s never as healthy as you think it is unless you make it yourself. My goal with sharing my meal preps is to hopefully inspire you to make similar recipes for yourself and family!

This weeks menu:

  • Eggs muffins with spinach and tomato

  • Baked turkey burgers with spinach, artichoke and cilantro

  • Baked parsnip fries tossed in avo oil, paprika, garlic, S&P

  • Baked mushrooms with garlic, chives and dill

  • Cauliflower broccoli mash made with oat milk and fresh garlic

  • Steamed broccoli with lemon

  • Grilled zucchini drizzled with olive oil and lemon

  • Spaghetti squash made in the oven

  • Baked apples with pumpkin spice seasoning, maple syrup and coconut oil

*Not pictured: a few things I like to make fresh

  • Salmon

  • Bone broth with veggies and glass noodles

  • Salad: usually a simple Greek. I also bought kale and Napa cabbage this week.

  • Fruit: berries, mango, banana, citrus
