Pecan Walnut Crusted Salmon

Spice up tonight's dinner with this pecan walnut crusted salmon recipe! Easy to prep & so delish!! I had mine over a kale avocado salad, but another great idea is to serve over cauliflower mash with roasted veggies.

What you’ll need:

+ Piece of salmon (I prefer wild)

+ Handful pecans

+ Handful walnuts

+ 1/4 cup olive oil

+ 1 tbsp dijon mustard

+ 2 cloves garlic (minced)

+ 1/2 lemon, squeezed

+ Handful fresh parsley

+ S&P to taste

**Parchment paper

How to:

+ Preheat oven to 350

+ Crush pecans & almonds and set aside

+ In a small bowl (or jar) mix olive oil, dijon mustard, garlic (minced), lemon, parsley, S&P

+ Place salmon on parchment paper and cover in mixture, then top with crushed nuts

+ Fold parchment paper so that salmon is fully covered

+ Bake for about 15 min
