Chocolate Chip Cookie Dough Bites
Looking for a healthy guilt-free dessert to satisfy that sweet tooth after dinner? I got you. These chocolate chip cookie dough bites taste like the real deal and are paleo approved (if the you use Lily's chocolate chips), dairy-free, low sugar, low carb & most importantly- so freaking good.
Dough
- 3/4 cup almond flour 
- 3 tbsp cashew butter 
- 2 tbsp coconut sugar 
- 1 tbsp almond milk (or dairy-free milk of choice) 
- dash of cinnamon 
- 2-3 tbsp chocolate chips 
Chocolate
- 1/2 cup chocolate chips 
- 1 tbsp coconut oil 
Instructions
- To make the dough, combine all ingredients in a medium bowl, mix well and form spoon sized balls with your hands 
- Place on a flat plate covered with parchment paper 
- freeze for 10-15 minutes 
- Boil water in a small pot and place a metal bowl over it 
- Combine coconut oil and chocolate to melt and stir for about 3-5 minutes until fully melted and set aside 
- Place the dough balls in the chocolate and using a spoon, cover evenly 
- Place the balls back on the parchment paper and freeze for another 30 minutes 
- Store in freezer until you're ready to enjoy!
