Banana Almond Flour Cookies
These clean ingredient cookies are beyond DELICIOUS! Because of the guilt-free ingredients, low-sugar and high-fiber content, they can be enjoyed for breakfast or as a healthy dessert. But, beware- they are seriously addicting. When I first sampled them, I mindlessly ate five!
The best part of the recipe is that the prep time is less than five minutes! After they bake, the consistency of the cookies are a pillowy soft with a gooey center, but with crunchy edges! An optional suggestion is to drizzle some warm peanut or almond butter on them and enjoy with a warm cup of tea or coffee!
Ingredients:
- 3 tbsp coconut oil (melted) 
- 1 egg (beaten) 
- 1.5 bananas (very ripe) 
- 2 cups almond flour 
- 1/2 cup flax meal 
- 1/2 tsp pink Himalayan alt 
- 1 tsp ground cinnamon 
- 1 tsp ground nutmeg 
- 1 tbsp vanilla extract 
- 1/4 tsp baking soda 
Instructions:
- Preheat oven to 350F 
- Combine all ingredients and mix well 
- On parchment paper, drop about 1/2 tbsp of dough and flatten out 
- Slice the other 1/2 banana and top the cookies. Also optional to top with extra ground cinnamon 
- Bake for about 20 minutes 
- Enjoy!! 
(Can be stored in the refrigerator for about 3-5 days)
