Summer String Bean Salad

What you’ll need:

  • 1 package of string beans

  • 1 package of snow peas or sugar snap peas

  • 1/4 cup red onion, minced or diced

  • 1/4 cup sliced almonds

  • 8-10 fresh mint leaves, chopped

  • 2-3 cloves of garlic, minced

  • Salt & pepper to taste

  • 2 tbsp avocado oil

  • 1-2 tbsp olive oil

  • 2 tbsp apple cider vinegar

  • 1/2 lemon

How to:

  • In a medium pot, boil the string beans for about 3-5 minutes until they soften. Drain and set aside.

  • In a medium skillet, heat avocado oil and add the snow peas or sugar snap peas. Sauté for around 3 minutes and add the cooked string beans. Continue to sauté for 5-7 minutes on medium heat.

  • Transfer to a bowl and add the remainder of the ingredients. Mix well!

    *If you prefer less of a garlic/ onion flavor, then add those ingredients to the skillet when cooking the green beans.
