Carrot Ginger Dressing
Dressing Ingredients:
- ⅓ cup olive oil 
- 1/4 cup toasted sesame oil 
- ⅓ cup rice vinegar (can also sub for apple cider vinegar) 
- 2 large carrots, peeled and diced or chopped thin (you can also use baby carrots ~ about 3-4 cups) 
- 2 tbsp peeled and chopped fresh ginger 
- 2 cloves fresh garlic 
- 2 tbsp lemon or lime juice 
- 1 1/2 tbsp honey 
- ¼ teaspoon salt, more to taste 
In my salad:
- Romaine lettuce 
- Cucumber 
- Cherry tomato 
- Scallion onion 
- Sesame seeds 
- You can also add red cabbage and red onion 
Instructions:
- Combine all dressing ingredients in a blender & blend on high until creamy 
- Store in refrigerator for up to 1 week
