3 Delish Kale Salads to Spice Things Up!

Start with chopped kale...

+ The Light Kale: 1/4 cup quinoa, chopped red apple, walnuts, dried cranberries, optional goat cheese. Dressing: olive oil, apple cider vinegar, red wine vinegar, 1/2 lemon, S&P.

+ Pad Thai inspired: chopped green cabbage, grated carrots, chickpeas, chopped red bell pepper, chopped red onion, 1 tsp fresh cilantro. Dressing: 1/4 cup PB, 1 tsp maple syrup, 1 lime, 1 tsp sriracha or hot sauce, 3 tbsp sesame oil, 2 tbsp coconut aminos, 1 tsp fresh grated ginger, 1/2 minced garlic cloves, S&P.

+ Kale Caesar: mix 1 clove minced garlic, 1/2 lemon, 1 tsp Dijon mustard, 1/4 cup Parmesan cheese (or nutritional yeast), S&P. Mix with chopped kale. Add pumpkin seeds for crunch.
