Fennel Apple Salad

One of my favorite light salads to make and/or bring to a BBQ or friends home for dinner! The grains give it it a little more substance and add some protein to this plant based meal.


Fennel is often overlooked at the grocery store and instead we all go for the basic kale and spinach greens. But this root vegetable provides so many health benefits (especially for women). It's loaded with potassium, vitamin C, vitamin A, vitamin B6, vitamin K and folate. It is also a great source of minerals such as iron, calcium, copper, zinc and selenium.


Some health benefits fennel provides:

  • Bone Health (high in calcium)

  • Improves skin health (antioxidants)

  • Lowers blood pressure (reduces inflammation)

  • Decreases risk of heart disease (lowers both cholesterol and blood pressure)

  • Helps with digestion (high in fiber)

  • Eye health (macular degeneration)

  • Aids in menopause symptoms for women

So, next time you're at the grocery store and you see this off looking vegetable- buy it!


Serves about 4


  • 1 bulb fresh fennel, chopped

  • 1 green apple, chopped

  • 1/2 cup super grain mix (dry)- I used this one from Whole Foods

  • 1/4 cup fennel greens, chopped

  • 1 cup celery, chopped



  • 1/4 cup olive oil

  • 4 tbsp apple cider vinegar

  • 4 tbsp balsamic vinegar

  • 4 tbsp red wine vinegar

  • 1/2 lemon juice

  • 2 tbsp dijon mustard

  • salt, pepper & garlic powder for taste



  • Cook grains as instructed and set aside to let cool

  • Chop up fennel bulb, fennel leaves, apple and celery and combine in a large bowl

  • Add in cooled grains and mix well

  • If you are enjoying the salad right away, mix in dressing. If saving some for later, keep dressing in a mason jar to avoid a soggy salad.
