Sushi is one of my favorite dinner options, however eating raw fish too often comes with a few complications. Eating lots of sushi with seaweed and soy sauce may boost your sodium intake and fatty sauces such as spicy mayo can make sushi high calorie, but the biggest risk from eating lots of sushi is mercury poisoning.
This quick and easy alternative is not only delicious, but comes with anti-inflammatory health benefits from the turmeric and it also high fiber, low calorie and vegan. My sushi bite dinner was ready in about 10 minutes and I'm already craving more!
Seaweed snacks, like this
2 cups cauliflower rice (I used frozen cauliflower rice)
1 tsp turmeric
1/2 tsp black ground pepper
1/2 tsp pink Himalayan salt
1 tsp garlic powder
1/4 avocado, sliced
1 scallion onion
Vegetable options: spiralized beets, bell peppers, cucumber, radish, carrot
On a dinner place, lay out the seaweed snacks
Cut up any vegetables into thin slices that you are adding to sushi bites (options above)
On a skillet, sauté cauliflower rice for about 5 minutes, add in spices (turmeric, black pepper, salt & garlic powder)
Let the "rice" cool before places a spoonful onto the seaweed snacks, otherwise the "rice" can make it soggy
Top with vegetables ann enjoy!!
