Turkey Meatballs over zero calorie noodles

Pasta has always been my weakness! A large bowl of spaghetti with a spicy arrabiata sauce and fresh basil has always been (and still is on occasion) my comfort food of choice. I'm not Italian, however it's my favorite cuisine! Meatballs can be really heavy, and although delicious- can leave you feeling tired, sluggish and ridiculously full.

 

This version of spaghetti and meatballs is made with a lean ground turkey meat and almond meal rather than bread crumbs, which pack on extra calories and simple carbohydrates. Not to mention, the recipe is extremely easy and makes a great meal prep option for the week! I also substituted regular pasta for a combination of zucchini noodles and miracle noodles, which unbelievably have zero calories and no carbs!  You can also use a healthier pasta, such as one made from chickpeas or black beans for added fiber.

 

Ingredients for Meatballs:

  • 1 package organic ground turkey

  • 1/2 cup almond meal

  • 1/2-3/4 jar tomato sauce of choice (I used arrabiata)

  • 1 large egg

  • 1 garlic clove

  • 1 tsp pink himalayan salt

  • 1 tsp black ground pepper

  • 1 tsp crushed red pepper flakes

  • 1 tbsp garlic powder

  • 1 tbsp oregano

  • Fresh basil

  • 3 tbsp olive oil

Noodles:

  • I used these noodles and cooked as instructed on the package

  • I also mixed with 1 zucchini, spiralized

Instructions:

  • In a large bowl, combine turkey, almond meal, egg and spices and stir well

  • In a large skillet, heat olive oil and fresh garlic until it begins to turn golden

  • Add the tomato sauce and wait for it to simmer on medium heat

  • Form meatballs and place them in the skillet and cover

  • Stir every 5 minutes or so and continue to cover the meatballs in sauce while cooking

  • Cook time should be 20-25 minutes

  • While the meatball are cooking, prepare noodles as instructed on the package

  • When the meatballs are ready, in a separate skillet- heat olive oil and combine noodles and zoodles with 3-4 tbsp tomato sauce and sauté for about 3-5 minutes

  • In a bowl, combine noodles and meatballs, option to garnish with fresh basil

  • Enjoy!
