I love experimenting with healthy alternatives when it comes to baking by substituting gluten filled sugary products with ones that you wont feel guilty about when enjoying. These clean ingredient cookies are beyond DELICIOUS! Because of the guilt-free ingredients, low-sugar and high-fiber content, they can be enjoyed for breakfast or as a healthy dessert. But, beware- they are seriously addicting. When I first sampled them, I mindlessly ate five!
The best part of the recipe is that the prep time is less than five minutes! After they bake, the consistency of the cookies are a pillowy soft with a gooey center, but with crunchy edges! An optional suggestion is to drizzle some warm peanut or almond butter on them and enjoy with a warm cup of coffee!
Preheat oven to 350F
Combine all ingredients and mix well
On parchment paper, drop about 1/2 tbsp of dough and flatten out
Slice the other 1/2 banana and top the cookies. Also optional to top with extra ground cinnamon
Bake for about 20 minutes
(Can be stored in the refrigerator for about 3-5 days)
